Spinach Ricotta Pie with a Hint of Feta


1/3 C Olive Oil

1 large onion, thinly sliced

2 bunches spinach (1 lb.), cut into ribbons and thoroughly dried

1 ½ C ricotta cheese

4 eggs

1 C feta cheese, crumbled

1 T dried oregano

Salt and pepper to taste


Preheat oven to 375 degrees F

1. Heat oil in a heavy pot over high heat

2. Add onion to pot and saute until translucent, about 3 minutes

3. Add spinach in batches and saute until just wilted

4. Lightly beat the ricotta and eggs together in a bowl

5. Add spinach mixture, feta, oregano, salt, pepper to ricotta-egg mixture and mix thoroughly

6. Pour batter into a greased 9 X 13 inch pan

7. Bake for approximately 40 minutes, until the top is lightly browned

8. Serve warm
